Who was Joseph Collick?

Joseph was landlord at The Lamb for 20 years, from 1785 to 1815, and was well known for being one of the pub's more 'confident' licensees. Reports at the time document his wagers with his customers! His business extended beyond bartending - he would often cater for events like cricket matches too.
